Better Than a Brownie
Sugarless Applesauce Oatmeal Brownies

Before I became a mommy, I had a fantasy as to what life would be like.  I fantasized about having my children on a sleep schedule from day one, using only cloth diapers, creating the artwork for the nursery and making all snacks and meals from scratch.  This all seemed like a good idea.  Then I got pregnant while working full-time and reality sat in.  Luke was ten months old before he slept through the night.  We bought all the artwork for his nursery.  Cloth diapers arrived during Luke's fourth month of life and we still use disposables at night.  I am very proud to say that while Luke does eat his fair share of goldfish crackers and cheeze-its, most of his food is homemade.

Shortly after Luke was born he and I went for a walk to a nearby coffee shop in Boise's Hyde Park.  Java Coffee and Cafe sold these nutritious cake like cookies that I have been trying to mimic since.  I discovered this recipe while searching for a way to use extra applesauce.  I double to the recipe to make a 13x9 pan. 

Ingredients:
*1/2 cup flour
*1 and 1/2 tsp. cinnamon
*1/4 tsp. salt
*1/4 tsp. nutmeg
*1/4 tsp. cloves
*1/2 tsp. allspice
*1/2 cup old fashioned oatmeal
*1 cup raisins
*1/2 cup applesauce
*1/4 cup cooking oil
*1 egg
*1 tsp. vanilla

Mix all ingredients together.  Pour into 8x8 greased pan and bake in a 375 oven for 15 minutes.


Luke tested and approved!  He has eaten an entire 8x8 pan by himself in two days.
